Ingredients
1/2 cup chopped onion
1 tsp curry powder
1/2 cups Quaker quick grits
1/2 tsp turmeric
1 cup okra
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp red pepper flakes
1 can chopped fiesta tomatoes
Sprinkle of salt
Handful of cabbage or mustard greens
Preparation
Step 1
Heat oil in pan to medium-high heat and add onions. Cook until
onions are transparent in color
Step 2
Add curry powder, turmeric, thyme, oregano and red pepper flakes.
Stir for 1 minute, then add 1 can of fiesta tomatoes and cabbage or
mustard greens. Stir for 3-5 minutes
Step 3
Add 6 cups of water or unsweetened almond milk or coconut milk
Step 4
Cover the pan and allow liquid to boil for 2 minutes
Step 5
Ad the grits slowly and sprinkle salt to taste, allow to cook for 5-7 minutes until grits have thickened to your preference
